		<description>Hi David, I&#039;ve also heard this, but I don&#039;t do it.  I keep bread in the freezer (unless I know it will all be eaten the day I buy it).  So the bread crumbs I make are from frozen bread - thawed of course.  I then put them straight back in the freezer, until required.  If you keep your bread for a day or two, I&#039;m sure it would make great bread crumbs - then freeze until required.</description>
