Another favorite with my family – Thai Chicken – and definitely dinner in 10 minutes or less for this one.  You can vary the basic recipe to fit in with what you’ve got in your fridge at the time – so don’t forget to check out my Variations at the end.  This recipe will feed about four.  You can keep left overs in the fridge and heat up the next day.  Also freezes okay.  Here goes:-

Thai Chicken

Thai Chicken – Ingredients

  • Oil for frying (I use olive oil)
  • 1 Onion – chopped
  • 2 Chicken breasts – chopped into bite sized pieces
  • 1 Large Red Capsicum – chopped (green, yellow or orange capsicum work just as well)
  • 2 Corn on the Cob – kernels removed (use frozen corn if you don’t have fresh cobs)
  • 2 Table Spoons Fish Sauce
  • 2 Tea Spoons Sugar
  • Chili to taste – I usually use chopped chili from the jar for this recipe – about 1-2 teaspoons – but you can use fresh*
  • Approx 440 g can of Coconut Cream or Milk (use less if you prefer Thai Chicken to be more dry)
  • Fresh Basil – if you have it – don’t use dried for this dish
  • Optional – small tin of chopped pineapple pieces, well drained

* If you’re making this dish for young children, you can leave the chili out – then divide into two pans at the end and just add chili to yours.

Thai Chicken – Method

  1. Have everything chopped and ready to go
  2. Fry the onion until soft
  3. Add the chicken and fry until just cooked through
  4. Add the Capsicum and Corn and cook for another minute or two
  5. Add the Fish Sauce, Sugar and Chili – give it all a quick stir
  6. Add the Coconut Cream/Milk and heat through
  7. If you’re adding chopped pineapple pieces, add now and heat through
  8. If you’ve got fresh basil, add it now and cook for another minute
  9. That’s it – like I said, Thai Chicken in ten minutes!
  10. Serve with boiled rice

Variations

Moms in the kitchen learn how to compromise and if you haven’t got all the ingredients on hand for this recipe, don’t panic!  Here are some variations to the basic Thai Chicken recipe:-

  • No chicken – don’t worry – add a few extra veggies and do a veggie version instead
  • Veggies that also work well – broccoli, carrots, potatoes,  courgettes …
  • Use White Fish instead of Chicken (my favorite)
  • Use Prawns instead of Chicken
