This is a favorite in our house, and as my young boys have become teenagers I’ve gradually added the hot spices, to slowly get them used to the flavor.  The preparing time for this recipe is ten minutes or less (you’ll get quicker the more times you make it).  Cooking time is an extra 15-20 minutes.  This recipe will serve approx four people.  If you’re cooking for just one or two why not make more than you need – it freezes really well and you’ll have a ready made chili con carne meal at a later date.  I do it all the time, often doubling this recipe for that very purpose.  Here goes:-

Chili Con Carne

Chili Con Carne Ingredients

  • Oil for frying (I use Olive Oil)
  • Onion, chopped
  • Approx 1 lb / 500g good quality beef mince
  • Good tea spoon of Ground Paprika
  • Half tea spoon Ground Hot Chillies (optional) *
  • Quarter tea spoon Ground Cayenne Pepper (optional) *
  • Good shake of Worcestershire Sauce (at least a table spoon – or more)
  • Good table spoon Tomato Paste
  • Approx 26 oz/800g tin of tomatoes (preferably chopped)
  • Approx 13 oz/400g tin of Red Kidney Beans – drained

* If you like your chili con carne very hot, add more spices.  Use fresh chili if you have it.

To serve (options)

  • Serve with cooked white or brown rice – or with oven baked potatoes – or with warm crusty bread
  • Serve with grated cheese sprinkled on top (I like to use a strong cheddar)
  • Serve with sour cream served at the side (optional)

Method

  1. Fry chopped onion in oil until soft
  2. Add mince and stir with the onion until the mince is browned
  3. Add the Paprika, Chillies and Cayenne Pepper and stir for a minute
  4. Add the Worcestershire Sauce and Tomato Paste and stir
  5. Add the Tomatoes and drained Red Kidney Beans and stir
  6. Bring to the boil and simmer slowly for about 15-20 minutes, stirring occasionally
