I think you’re going to love these Peach Muffins. Serve them warm, with a dollop of fresh cream – peaches and cream never tasted so good 🙂

Muffins are so quick and easy to make – you might like to try Chocolate Muffins and Banana and Chocolate Chip Muffins.

If there are any left, freeze them – perfect for a quick school lunch box treat.

Peach Muffins

To keep things simple I use a cup measure.  The cup should hold approx 250 ml/8 fl oz of liquid.

Here goes:

Peach Muffins – Ingredients

  • Two cups self-raising flour
  • Half a cup raw sugar (or white sugar)
  • Approx 100g/3.5oz of butter (or your usual spread)
  • 1 cup milk (I use soy)
  • 1 egg – beaten
  • 1 tea spoon vanilla essence (optional)
  • 1 cup chopped tinned peaches (or you can use fresh)
  • Muffin tray to cook 12 muffins
  • Oil spray to spray muffin tray

Peach Muffins – Method

  1. Heat oven to moderately hot
  2. Spray your muffin tray with oil spray
  3. Put flour and sugar into a bowl and stir
  4. In a separate bowl add butter and melt gently in microwave
  5. Add the milk, egg, vanilla essence and peaches to the melted butter and stir
  6. Add this liquid mixture to the dry ingredients and stir to combine
  7. Divide mixture between 12 muffin tray
  8. Cook in moderately hot oven for 12-14 minutes until golden and springy to the touch
  9. Allow to sit in the tray for a couple of minutes before taking out and placing on a rack to cool slightly

Variations and Handy Hints

  • Try these peach muffins served warm with fresh cream – delicious!
  • It would appear anything goes, as far as muffins are concerned – try different fruits – fresh or tinned
  • Of course chocolate muffins are always popular – just add some cocoa powder and chocolate chips to the dry ingredients
  • Banana and Chocolate Muffins are also delicious
  • Don’t over mix the ingredients – the muffins don’t seem to rise as well if you do over mix
  • Muffins are best served shortly after making, but you can re-heat in the microwave to serve them warm at a later time
  • Muffins freeze well
  • Perfect for school lunch boxes
